How to become Bishop or Prophet in Lineage 2?
Currently I'm Human Knight LvL 48 So how do I change profession to Bishop or Prophet.

You can't. A human knight can go either palladin or dark avenger both are tanks. At lvl 48 you are 8 lvls past second class change at lvl 40. To go bishop or prophet you would have had to roll a human cleric. You can't switch over to cleric to change your profession. If you wish to go with a buffer/healer then you need to roll a human cleric and do your second class change on that. On all races only the mystic classes can change profession to buffer/healer classes. Fighter classes such as knights and warriors cant.
